🥗 Ingredients
3 kg diced nopal (cactus paddles)
5 tomatoes (for the sauce)
1/2 onion
4–5 guajillo chiles (seeded)
2 garlic cloves
1 bunch fresh cilantro
Pepper to taste
Tía Ofilia fine sea salt to taste
👩🍳 Instructions
Cook the nopal:In a pot, add the diced nopal with a small amount of water (the less, the better). Cook until the color changes, then strain and rinse lightly to remove the sticky residue.
Prepare the sauce:In a pot with boiling water, cook the tomatoes and guajillo chiles for a few minutes until softened.
Blend:Transfer the tomatoes and chiles to a blender. Add onion, garlic, and salt. Blend until smooth.
Cook the sauce:Pour the mixture into a pan or pot and let it simmer for a few minutes to concentrate the flavor.
Combine the nopal and cilantro:Add the cooked nopal to the red sauce, mix in finely chopped cilantro, and cook together for about 10 minutes over medium heat. Adjust salt and pepper to taste.
